Since ancient times, the people here have been producing fish sauce fermented in large wooden barrels, with a vast supply of fish caught year-round every day, particularly the striped rice fish, which is particularly well-suited to making traditional fish sauce and is distributed throughout the Southwest Region in general and Kien Giang in particular; its quality is on a par with that of the major fish sauce producers in Phu Quoc,

It can be said that traditional fish sauce production is one of the main occupations of the local people, with many well-established brands such as Hong Hai, Phuong Khanh, Hong Phuoc, Loc Hai, etc., but the oldest and largest in scale is Thuỳ Dương Fish Sauce, one of the few businesses that has preserved the traditional craftsmanship passed down from generation to generation, using the method "Three parts fish – One part salt" fermented and sun-dried under the natural climate of Hòn Sơn creating a rich, authentic, and uniquely delicious flavour that remains famous to this day.

Today Hòn Sơn still preserves the traditional craft of making fish sauce, although the volume has decreased significantly, as the annual catch of anchovies has dwindled and raw materials are scarce; consequently, Hòn Sơn no longer produces many traditional fish sauce brands, and to date,the main fish sauce producer in Hòn Sơn remains Thuỳ Dương.

Thuy Duong Fish Sauce Company has been famous for centuries and produces a consistent volume to serve customers near and far for many years, so the quality is excellent and extremely delicious, with various protein levels ranging from 20–30 degrees, 40 degrees, and the finest being the 42-degree variety; this is also one of the specialities of Hon Son, making it an easy purchase to take home as a souvenir when you visit Hon Son.
